This collection brings together my most comforting winter dinners that are easy enough for any night of the week — and so delicious! You’ll find everything from queso-style chili and creamy soups to cozy pot roast, slow cooker tacos, one-skillet pastas, and colorful chicken bowls. These are some of my most-loved winter recipes. Perfect for busy nights when you still want something warm, cozy, and satisfying.

This roundup has been a long time coming. You all know how much I love a cozy winter dinner. These are some of my favorite cold-weather recipes I’ve shared over the years — and some of yours too!
When it comes to winter cooking, I think many of us can start to feel a little stuck on what to make for family and friends. It’s easy to fall into the same routine of chicken and rice, taco night, and maybe a chili or two. At least that’s how it was in my family growing up.
One of my favorite parts of sharing recipes is helping you get out of those cooking slumps. I’ve had to get creative myself at times, and I’m so excited to share this collection of comforting winter dinners with you.

Your recipes tend to have a lot of ingredients and sometimes the quantity used is small so there are a lot of leftover ingredients not used. Wondering if in the future you could do a series where you can make 2-3 recipes using some of the same ingredients so I don’t waste things.
