My oldest brother, Creighton, has been asking me to make him a real Philly cheesesteak since I was probably 12 years old, when our family was living in Cleveland. He loves any kind of sandwich piled high with meat and cheese, so as you can imagine, cheesesteaks are one of his favorites.

Over the years I’ve made plenty for him — thinly sliced seasoned meat, caramelized onions, and melty provolone piled onto a warm hoagie with lettuce and tomatoes. Sometimes I add peppers too. It’s always quick, always delicious, and honestly… who doesn’t love a cheesesteak?

But I’ve shared before that the way I make them at home is definitely not how they do it in Philly. Maybe someday I’ll make it to Philadelphia to try the real thing, but for now, homemade works just fine.

A few weeks ago, when everyone was home together, we switched things up and made a Greek-style version with shaved lamb, sautéed onions, feta, and melty gouda. Then we added fresh toppings and served them with oregano fries on the side.

They turned out really, really good — and honestly just fun to eat. These feel perfect for easy spring and summer dinners when you want something casual, flavorful, and a little different.

Ingredients

  • butter
  • yellow onion
  • shaved lamb or skirt steak
  • smoked paprika
  • cayenne pepper
  • fresh parsley
  • fresh oregano
  • fresh dill
  • hoagie rolls or pitas
  • feta cheese
  • Gouda or mozzarella cheese

For Serving

  • tzatziki
  • cucumbers
  • tomatoes
  • lettuce
  • lemon

The Steps

Step 1: Start the Onions

Melt a little butter in a large skillet over medium heat. Add the sliced onion and cook until softened. I like to give the onions a little extra time in the pan so they turn lightly golden around the edges. That extra bit of caramelization adds so much flavor to the sandwiches.

Step 2: Cook the Meat

Add the shaved lamb or skirt steak right into the skillet with the onions. Season with paprika, cayenne, salt, and black pepper. Let the meat cook undisturbed for a minute or two so it develops plenty of crispy edges. Those browned bits are what make this taste so good. Once the meat is nicely browned, stir in the parsley, oregano, and dill. The fresh herbs give this cheesesteak its Greek-inspired flavor. Remove the skillet from the heat once everything smells amazing.

Step 3: Prepare the Rolls

Split the hoagie rolls or pitas and fill them with the hot meat mixture. Sprinkle over the feta, then add a slice of Gouda. The combo of salty feta and melty cheese is what really makes these sandwiches special. Place the filled sandwiches on a baking sheet and pop them into the oven for about 5 minutes, just until the cheese melts and becomes bubbly.

Step 4: Mix the Tzatziki

While the sandwiches bake, stir a little extra feta into the tzatziki. This makes the sauce extra creamy and slightly tangy, and it helps tie all the flavors together.

Step 5: Toss the Toppings

In a small bowl, toss the cucumbers and tomatoes with a pinch of oregano and dill. This quick step gives the veggies a little extra flavor and keeps the sandwich feeling fresh and bright.

Once the sandwiches come out of the oven, layer in some lettuce, spoon over the feta tzatziki, and top with the cucumber and tomato mixture. Finish everything with a squeeze of fresh lemon and a sprinkle of flaky sea salt.

These are especially good served with homemade feta oregano fries or Greek feta fries.

    2. Melt the butter with the onion in a large skillet over medium heat. Cook for 3 to 5 minutes, until softened.

  1. A little confused on which cheese to use. Your instagram story shows mozzarella in the ingredients picture and in the actual video. The recipe is called Gouda. On your blog you say to use either. These have completely different taste profiles. As far as taste goes these are not interchangeable. Is the goal just melty cheese and the taste doesn’t matter?

    How do I find shaved lamb shoulder? Did you just ask your local butcher at the grocery store or a specialty butcher?

      I was able to find it at Trader Joes. I would also just ask your butcher for suggestions, I’m sure they will be helpful! You could also use flank steak for this recipe.

I’ll be making this as soon as I find somewhere to buy shaved lamb since there’s no Trader Joe’s near where I live. And flank steak has a completely different flavor profile. Any ideas?
