Classic Buckeyes. Growing up in Ohio, these were such a staple, especially once fall and football season rolled around. If you know, you know. Creamy peanut butter mixed with butter and vanilla, rolled into little balls, then dipped in chocolate with that signature bit of peanut butter peeking through on top.

They’re simple and always so delicious. Make a big batch to keep in the fridge for game days, fall gatherings, or really anytime you need a little chocolate peanut butter treat. They are great for the holidays too!

Ingredients

▢ 1 1/2 cups creamy peanut butter
▢ 1 1/2 sticks salted butter, softened
▢ 1 teaspoon vanilla extract
▢ 3 cups confectioners’ sugar, plus more if needed
▢ 4 cups semisweet chocolate chips
▢ 1 tablespoon coconut oil

Instructions

1. Beat the peanut butter, butter, and vanilla until creamy. Add the confectioners’ sugar, 1 cup at a time, until firm enough to roll.
2. Roll into 60 (1-inch) balls. Place on a parchment-lined baking sheet, insert a toothpick into each, and freeze for 30 minutes.
3. Melt the chocolate and coconut oil in 30-second intervals, stirring until smooth.
4. Dip each ball into the chocolate, leaving a small circle of peanut butter exposed on top. Remove the toothpicks. Chill for 20 minutes, until set. Store refrigerated in an airtight container.
